Baked Oatmeal Banana Bread

This baked oatmeal banana bread is not only moist and delicious it’s full of flavour. Perfect for satisfying that craving we all can have for something naturally sweet without the guilt!

Always use well ripened bananas for extra sweetness.

Makes 6 slices

Ingredients:

2 Over ripe Bananas

1 Egg

1/2 cup Unsweetened Almond Milk

1/3 cup 0% Total Greek Yoghurt

2 tsp. Vanilla Extract

10-15 drops of liquid stevia of choice (I use toffee flavour)

1 cup Oats of choice

1/3 cup protein powder flavour of choice (I use chocolate)

2 tsp. cinnamon

1/2 tsp. baking powder

1/2 tsp. baking soda

1 tbsp. raw cacao powder

Method:

Pre heat the oven to 170°

Blend the bananas, egg, almond milk, Greek yoghurt and vanilla until smooth and creamy then pour into a large bowl.

Stir until well combined the oats, protein powder, cinnamon, cacao & baking powders then add this mix to the wet mixture.

Stir very well and pour into a bread pan lined with baking parchment (makes it easier to lift out the bread).

Bake for 35 - 40 minutes without opening the oven door.

Make sure the fork comes out clean.

Allow to cool and eat immediately or pop it in the fridge and microwave to warm!
